Crispy Salmon Bowl
This is a dinner staple and it is SO delish, healthy with macros on point. You will love this recipe, and it will be a part of your dinner rotation 100%!
INGREDIENTS:
4 salmon filets, cut into bite-size chunks
1 egg white
1/2 cup sesame seeds olive oil, for drizzling
1/4 cup tamari or soy sauce low sodium
3 tbsp raw honey
1-2 tosp chili sauce optional
2 tbsp toasted sesame oil
1 tbsp grated fresh ginger
3-4 cups cooked jasmine or brown rice
HERB SALAD
lettuce like leafy greens, romaine
2 avocados, diced
2 small cucumbers, chopped
1/2 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped
1/2 cup cherry tomatoes, halved
2 tbsp lemon or lime juice
Sea salt
SPICY MAYO
1/2 cup mayo I used @chosenfoods
1-2 tablespoons sriracha
DIRECTIONS:
Place the sesame seeds in a shallow bowl. Add the egg white to a separate bowl. Toss each piece of salmon through the egg, then coat in seeds. Place on the prepared baking sheet in a single layer.
Drizzle the salmon with olive oil. Bake 10-15 minutes or until the salmon is cooked to your liking. I broiled at the end to make it extra crispy.
In a small bowl, whisk together the tamari/soy, honey, chili sauce, toasted sesame oil, and ginger. Set the sauce aside for serving.
To make the salad combine all of the ingredients, top with the cooked salmon. Then drizzle your sauce over the salad and top with your spicy mayo!
