Gluten Free Crispy Beef Tacos

This is family friendly delicious dinner idea! Quick, healthy and super yum. The kiddos will love this one too and perfect when you’re in a pinch for time! 

INGREDIENTS:

  • 1lb lean grass fed ground beef

  • taco seasoning like @sietefoods

  • Organic cheddar cheese or plant based cheese

  • Gluten free tortillas, corn tortillas or @sietefoods grain-free tortillas are great as well 

  • Avocado oil spray, or avocado/olive oil 

  • Optional * refried beans 

  • Serve with: iceberg lettuce, tomato, guacamole, Greek yogurt, cilantro, salsa 

DIRECTIONS:

  • Preheat the oven to 400.

  • Add the ground beef and diced onion to the pan, breaking up the beef into small pieces, and cook for 5-7 min until the beef is browned and add in the taco seasoning.

  • While the meat mixture finishes cooking, warm the refried beans if you’re using them, in a small saucepan over low heat so they are easily spreadable and warm the tortillas so they are pliable and won't rip 

  • Add a piece of parchment paper to a sheet pan or a silpat like I have. Warm tacos so they don’t break when folding.

  • When your meat mixture finishes cooking, assemble your tacos by adding a generous smear of refried beans if using and about 1/4 cup of ground beef mixture to one half, sprinkle cheese and fold over

  • Repeat for the remainder of your tacos (you'll need to set something like a butter knife on the tacos so they keep their shape)

  • Spray your tacos with avocado or olive oil spray or spread with silicone brush 

  • Place a sheet pan on top of your tacos and bake for 13-15 min

  • Remove the sheet pan off the top of your tacos and set the oven to broil

  • Broil for 2 min or longer if needed so the tacos get nice and crispy

  • Remove from oven and serve with toppings/dips and devour!
