Paleo Chocolate Zucchini Loaf
This moist, healthy and delicious loaf tastes like dessert BUT with a sneaky ingredient! An easy way to hide those veggies in, making this recipe kiddo and parent approved! Grain free, dairy free, refined sugar free!
INGREDIENTS:
1 + 1/3 cups almond flour
6 tbsp cocoa powder
1 tsp baking soda
1/4 tsp sea salt
1/4 cup organic coconut oil melted and cooled
1/4 cup almond butter or cashew butter
1/2 cup coconut sugar
1/4 cup raw honey or more if desired
3 large eggs room temp
1 tsp pure vanilla extract
2 small zucchini peeled and finely shredded - 1 3/4 -2 cups shredded, water squeezed out with paper towels
2/3 cup dark chocolate chunks, Enjoy Life brand
DIRECTIONS:
Preheat your oven to 350°F and use a silicone loaf pan OR line a medium loaf pan with parchment paper.
In a medium bowl, combine the almond flour, cocoa powder, baking soda and salt.
In a large bowl, whisk or blend together the coconut oil, nut butter, coconut sugar, eggs and vanilla until well combined and smooth.
Add the dry ingredients to the wet until well mixed, then fold in the shredded zucchini and chocolate chunks.
Pour into the loaf pan and bake until a toothpick comes out clean, 50-55 minutes.
Cool for 15 minutes, then gently remove the loaf and continue to cool completely before slicing! Store leftovers in the refrigerator for up to 5 days and devour!
