High Protein Sweet Potato Nachos
Your new go-to for hitting protein goals in TACO form without sacrificing flavour. Everyone raved about this dish so this will be a repeat staple!

INGREDIENTS:
Ingredients
1 lb sweet potato cut into thin slices (¼" or less)
avocado cooking spray or oil
salt, pepper, garlic powder
1 lb extra lean grass fed ground beef
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
(OR siete taco seasoning)
salt & black pepper to taste
4-6 oz shredded mexican-blend cheese
Toppings:
pico de gallo/salsa
avocado chunks or guacamole
chopped cilantro
full-fat plain greek yogurt
jalapeños (IF YOU WANT SOME SPICE!)
lettuce
tomato
METHOD:
Preheat the oven to 400° F. Line a baking sheet with parchment paper. Toss the sweet potatos in salt, pepper, garlic and spray or toss with oil. Bake for 20-25 min until golden and crisp.
Fry up the ground beef, season with seasoning or taco seasoning. Cook until browned.
Once the potatoes are cooked, layer on the ground beef, sprinkle with cheese and melt in the oven for around 5 minutes.
Top the nachos with shredded lettuce, avo, tomato, pico/salsa, guac, greek yogurt!
