Healthier Funfetti Cake

This cake recipe has been tried and true for years in my household! It is moist, delicious, and healthyโ€ฆbest part no one will know!

INGREDIENTS

  • 1/3 cup coconut oil, softened or almost melted

  • 1/3 cup coconut sugar

  • 1/3 cup pure maple syrup

  • 2 tbsp almond or cashew butter

  • 2 free range eggs

  • 2 + 1/2 cups almond flour

  • 1/2 tsp baking soda

  • 1 tsp vanilla

  • sprinkles of your choice

  • vanilla icing optional (I make my own with grass fed butter, organic icing sugar)

DIRECTIONS 

1. Preheat oven tp 350F. Combine the coconut oil, coconut sugar, maple syrup, nut butter, 2 eggs, vanilla and whisk together in a large bowl.

2. Add in the almond flour, baking soda and mix with wet mixture then fold in your sprinkles.

3. Add into a coconut oil greased small cake pan or 8x8 baking dish, bake for 20-25 minutes.

4. Once cooled you can add icing and sprinkles or eat as is
