Peanut Butter Protein Bars

These easy, no-bake PB bars are the perfect Easter treat, esp with a lil’ mini egg action on top … I also added a punch of plant based protein as always

INGREDIENTS: 

1 cup natural Peanut Butter 

1/3 cup + 1-2 tbsp Coconut Flour 

1-2 scoops plant based protein, I used our @aphina.co Performance Protein, code MICHELLEMETHOD

1/2 cup pure Maple Syrup

Chocolate ganache topping - 

1/2 cup vegan dark chocolate, I use @enjoylifefoods 

1/4 cup natural Peanut Butter 

2 tbsp Coconut Oil, melted 

Himalayan sea salt

*optional crushed Mini Eggs to top 

DIRECTIONS:

1. Cover a 9-inch x 5-inch baking dish with parchment paper. Set aside.

2. In a medium-sized mixing bowl, stir peanut butter and maple syrup until evenly combined and smooth.

3. Stir in coconut flour and protein. The dough will get thicker, you can also use your hands to knead the dough and form a ball.

4. Evenly press the peanut butter dough ball into prepared pan, smooth the top using the back of a spoon.

5. Freeze while you prepare the chocolate. 

6. In a small mixing bowl, add the dark chocolate with melted coconut oil and peanut butter. Melt on the stove or in the microwave by 30-second bursts, stirring between to prevent the chocolate from burning until melted. 

7. Remove the baking dish from the freezer and pour the chocolate over the peanut butter layer. Spread evenly with a spatula. Optional to top with Himalayan sea salt + crushed mini eggs! 

8. Return the pan to the freezer for 10 minutes or until the chocolate is set.

9. Slice into 15 bars and devour! Best stored in the fridge, and best eaten at room temperature!
