These muffins are healthy, fluffy, festive and SO GOOD! Grain, gluten, dairy and refined sugar free for a healthy muffin alternative that tastes incredible!

INGREDIENTS:

  • 2 cups almond flour

  • ½ teaspoon baking soda

  • ⅛ teaspoon sea salt

  • zest of 1 orange

  • 3 eggs

  • 1/4 cup raw honey

  • 1/4 cup coconut sugar

  • 2 tablespoons grass fed butter or coconut oil, melted

  • 2 tablespoons fresh orange juice

  • ½ cup fresh cranberries

DIRECTIONS:

  1. Preheat oven to 325 degrees F and grease or line muffin tin or use a silicone muffin tin.

  2. Combine dry ingredients and orange zest in large bowl. Combine wet ingredients in medium bowl. Stir wet ingredients into dry ingredients, then fold in cranberries.

  3. Fill the muffin cups ¾ full.

  4. Bake for 20-25 minutes, until golden brown and toothpick inserted in centre comes out clean. Cool on wire rack and devour!
