Healthy No-Bake Chocolate Turtles

“mmm…I loves turtles” [us 80’s kids know the jingle ] A true holiday favourite that is no bake, cleaned up, healthy-fied with minimal ingredients! Stay tuned for lots of fun, healthy recipes all December long!

INGREDIENTS

  • 1/2 cup dairy free dark chocolate

  • 1 tbsp coconut oil

  • 1 heaping cup pitted dates

  • pecan halves

  • Himalayan sea salt

DIRECTIONS 

  1. If your dates are a little hard, soak in hot water for 10 minutes. In a food processor, process dates until they become a jam-like consistency.

  2. Roll the date mixture into 12-15 small balls using the palms of your hands, then place the balls onto parchment paper on a baking tray.

  3. Press 3 pecan halves into the date balls to flatten and freeze for 8-10 minutes to set.

  4. Heat a small saucepan over very low heat and add in the chocolate, coconut oil and stir until completely melted down. Remove from the heat.

  5. Using a spoon, pour chocolate sauce over each date/pecan. Repeat until each one is covered with the chocolate.

  6. Sprinkle on some Himalayan sea salt and store in the fridge or freezer + devour!
