Healthy Big Mac Salad

Big Mac night but make it healthier ;) The kids wanted Big Mac crunch wraps, so healthy-fied those and whipped this up for mama! Quick and easy especially on a weeknight!

INGREDIENTS:

Salad-

  • 1 lb Grass Fed Extra Lean Ground beef

  • 1 tsp Sea salt

  • 1/4 tsp Black pepper

  • 8 oz Romaine lettuce (chopped; or iceberg lettuce if desired)

  • 1 cup Cherry Tomatoes (chopped)

  • 1/4-1/2 cup Organic Old Cheddar cheese (shredded)

  • 1/2 cup Pickles (diced)

  • Sesame seeds (optional, for garnish)

Dressing:

  • 1/2 cup Chosen Foods Avocado Mayo

  • 2 tbsp Pickles (diced) or Relish

  • 2 tsp Mustard

  • 1 tsp White vinegar

  • 1/2 tsp Smoked paprika

  • 1 tsp Coconut sugar

METHOD:

  1. Add the ground beef to a large skillet, add salt and pepper, cook 8-10 minutes or until cooked through.

  2. Puree the dressing ingredients into a small blender or whisk.

  3. In a large bowl combine the lettuce, tomatoes. cheese, pickles.

  4. Add the ground beef, drizzle the dressing and toss!
