Healthy Big Mac Salad
Big Mac night but make it healthier ;) The kids wanted Big Mac crunch wraps, so healthy-fied those and whipped this up for mama! Quick and easy especially on a weeknight!
INGREDIENTS:
Salad-
1 lb Grass Fed Extra Lean Ground beef
1 tsp Sea salt
1/4 tsp Black pepper
8 oz Romaine lettuce (chopped; or iceberg lettuce if desired)
1 cup Cherry Tomatoes (chopped)
1/4-1/2 cup Organic Old Cheddar cheese (shredded)
1/2 cup Pickles (diced)
Sesame seeds (optional, for garnish)
Dressing:
1/2 cup Chosen Foods Avocado Mayo
2 tbsp Pickles (diced) or Relish
2 tsp Mustard
1 tsp White vinegar
1/2 tsp Smoked paprika
1 tsp Coconut sugar
METHOD:
Add the ground beef to a large skillet, add salt and pepper, cook 8-10 minutes or until cooked through.
Puree the dressing ingredients into a small blender or whisk.
In a large bowl combine the lettuce, tomatoes. cheese, pickles.
Add the ground beef, drizzle the dressing and toss!
