Banana Bread Blender Muffins

These muffins are SO delish + easy to make. Throw all of the ingredients in the blender + voila! You can sub for any nut butter + topping of your choice. They are also grain free, gluten free, dairy + refined sugar free, and perfect for the whole family!

 INGREDIENTS:

  • 3 ripe bananas

  • 1/2 cup almond butter

  • 3 free range eggs or flax/vegan eggs

  • 2 tbsp maple syrup

  • 1/2 cup almond flour

  • 4 tbsp coconut flour

  • 1 tsp vanilla

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • Himalayan sea salt

  • Toppings: @enjoylifefoods chocolate chips, blueberries, anything!

 DIRECTIONS:

  1. Preheat the oven to 350F.

  2. Grease muffin tin with coconut oil.

  3. Place all ingredients into your vitamix blender, donโ€™t over blend!

  4. Pour into muffin tins, 3/4 full. Place the toppings of your choice.

  5. Bake for 15 minutes, let cool completely + devour!
